Ingredients

  • 1 cup granulated sugar
  • 8 ounces cream cheese, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • a pinch of salt
  • 1 cup crushed peppermint candies
  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the softened cream cheese until well combined and smooth.
  4. Mix in the egg and vanilla extract. If using peppermint extract instead of crushed candies, add it here.
  5. In a separate bowl, whisk together the all-purpose flour, baking powder, and a pinch of salt. Gradually add this to the wet ingredients, mixing until just combined.
  6. Gently fold in the crushed peppermint candies and chocolate chips, if desired.
  7. Using a cookie scoop or tablespoon, drop dough onto a lined baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  9. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
