- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 8 ounces cream cheese, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- a pinch of salt
- 1 cup crushed peppermint candies
- 1 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Beat in the softened cream cheese until well combined and smooth.
- Mix in the egg and vanilla extract. If using peppermint extract instead of crushed candies, add it here.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and a pinch of salt. Gradually add this to the wet ingredients, mixing until just combined.
- Gently fold in the crushed peppermint candies and chocolate chips, if desired.
- Using a cookie scoop or tablespoon, drop dough onto a lined baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For a stronger peppermint flavor, consider using peppermint extract in place of crushed peppermint candies.
- These cookies can also be stored in an airtight container for up to a week.
