Delicious cookies made with shredded coconut and a hint of vanilla.
Ingredients

- 1/2 cup unsalted butter, softened
- 3/4 cup light brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup sweetened shredded coconut (toasted optional)
Instructions
- Prepare the Oven
Preheat oven to 350°F.
Line a baking sheet with parchment paper or spray lightly. - Mix Wet Ingredients
Cream butter and brown sugar until smooth.
Add egg and vanilla, mixing until combined. - Combine Dry Ingredients
In a separate bowl, mix flour, baking soda, salt, and 1/2 cup coconut. - Form the Dough
Add dry ingredients to wet ingredients and mix.
Stir in remaining coconut by hand. - Bake
Scoop dough onto baking sheet.
Bake 9–11 minutes until edges are set.

- Ensure the butter is softened for easier mixing.
- Toasting the coconut enhances its flavor.
