Description

Ingredients

  • 4 large sweet onions (about 2 lbs), thinly sliced
  • 4 tbsp unsalted butter
  • 6 cups beef broth
  • 1 cup grated Gruyère cheese
  • 4 slices baguette
  • 3 sprigs fresh thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the sliced onions and cook slowly until golden brown and caramelized, about 25 minutes.
  3. Season with salt and pepper, stir in thyme sprigs, and cook for another 5 minutes.
  4. Pour in the beef broth and bring to a gentle simmer. Let cook for an additional 15 minutes.
  5. While the soup simmers, toast baguette slices until crispy.
  6. Serve hot soup in oven-safe bowls, top with toasted bread and grated Gruyère, then broil until bubbly and golden brown (about 3-5 minutes).
