- 4 chicken breasts
- 1 pound asparagus, trimmed
- 1 cup shredded mozzarella cheese
- 1/3 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 3/4 cup heavy cream
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a baking dish with olive oil and arrange asparagus in a single layer.
- Pat chicken breasts dry and season with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet and sear chicken on both sides for 3–4 minutes until golden (do not cook through).
- Transfer chicken to the baking dish, placing it over the asparagus.
- In a bowl, whisk heavy cream, minced garlic, and a tablespoon of Parmesan. Pour over the chicken and asparagus.
- Sprinkle mozzarella and remaining Parmesan on top of each chicken breast.
- Bake uncovered for 25–30 minutes, until the chicken reaches 165°F (75°C) and the cheese is bubbly and golden.
- Garnish with fresh parsley before serving.
Notes
- For added flavor, you can marinate the chicken in Italian seasoning for a few hours before cooking.
- This dish is great served with a side of rice or pasta.
