Ingredients

  • 2 tbsp Olive Oil (For sautéing.)
  • 8 oz Mushrooms (White button or cremini.)
  • 2 cloves Garlic (Minced.)
  • 4 cups Fresh Spinach (Substitute with kale for a hearty option.)
  • 1 cup Heavy Cream (For a lighter twist, try half-and-half or coconut milk.)
  • 1/2 cup Parmesan Cheese (Grated.)

  • 1/4 cup Fresh Basil (Chopped.)

Instructions

  1. Bring a large pot of salted water to a rolling boil. Add your favorite pasta and cook until al dente, roughly 8-10 minutes. Drain and set aside; do not rinse to retain the starch.
  2. In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté for 5-7 minutes until they are beautifully golden brown and fragrant.
  3. Toss in minced garlic and sauté for 1 minute until aromatic. Stir in fresh spinach and cook until wilted, about 2 minutes.
  4. Pour in heavy cream and bring to a gentle simmer. Add grated Parmesan cheese and stir until melted and creamy. If your sauce is too thick, adjust with a splash of reserved pasta water.
  5. Add the cooked pasta to the skillet, gently tossing to coat in the luscious sauce. Season with salt and pepper to taste.
  6. Serve hot, garnishing with fresh basil for an aromatic finish.
