- 2 tbsp Olive Oil (For sautéing.)
- 8 oz Mushrooms (White button or cremini.)
- 2 cloves Garlic (Minced.)
- 4 cups Fresh Spinach (Substitute with kale for a hearty option.)
- 1 cup Heavy Cream (For a lighter twist, try half-and-half or coconut milk.)
- 1/2 cup Parmesan Cheese (Grated.)

- 1/4 cup Fresh Basil (Chopped.)
Instructions
- Bring a large pot of salted water to a rolling boil. Add your favorite pasta and cook until al dente, roughly 8-10 minutes. Drain and set aside; do not rinse to retain the starch.
- In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté for 5-7 minutes until they are beautifully golden brown and fragrant.
- Toss in minced garlic and sauté for 1 minute until aromatic. Stir in fresh spinach and cook until wilted, about 2 minutes.
- Pour in heavy cream and bring to a gentle simmer. Add grated Parmesan cheese and stir until melted and creamy. If your sauce is too thick, adjust with a splash of reserved pasta water.
- Add the cooked pasta to the skillet, gently tossing to coat in the luscious sauce. Season with salt and pepper to taste.
- Serve hot, garnishing with fresh basil for an aromatic finish.
