This easy crockpot recipe features chicken breasts cooked in a flavorful salsa and bean mixture.

- 4 boneless, skinless chicken breasts
- 1 cup salsa
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Place chicken breasts at the bottom of the crockpot.
- Add salsa, black beans, corn, cumin, chili powder, garlic powder, salt, and pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- When the chicken is cooked through, shred it with two forks.
- Mix the shredded chicken back into the sauce.
- If using, sprinkle cheese on top and let it melt before serving.
