Description

This easy crockpot recipe features chicken breasts cooked in a flavorful salsa and bean mixture.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Place chicken breasts at the bottom of the crockpot.
  2. Add salsa, black beans, corn, cumin, chili powder, garlic powder, salt, and pepper.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. When the chicken is cooked through, shred it with two forks.
