Description

A hearty dish featuring Italian sausage cooked with bell peppers and marinara sauce, perfect for serving on rolls or over pasta.


Ingredients

Scale
  • 2 lbs uncooked Italian sausage (sweet, spicy, or mixed)
  • 2 Tablespoons olive oil
  • 4 bell peppers (assorted colors, seeded and sliced)
  • 2 yellow onions (sliced)
  • 1 (24 ounce) jar marinara sauce
  • 3 cloves garlic (minced)
  • 2 teaspoons Italian seasoning
  • Salt and pepper (to taste)

Instructions

  1. Heat oil in a large skillet over medium-high heat. Brown sausages on both sides, about 2 minutes per side. You don’t need to cook them through, you are just looking to add a little color.
  2. Add marinara sauce, garlic, Italian seasoning, salt, and pepper to your slow cooker. Stir to combine.
  3. Add sausages, peppers, onion. Stir once more.
  4. Cover and cook on low for 5-6 hours (recommended) or high 3-4 hours until sausage is cooked through and veggies are tender.
  5. If desired, remove and slice sausage into 1 inch pieces and add back to the slow cooker. Allow to cook 15 more minutes.
  6. Serve warm on its own, on rolls, or over pasta or mashed potatoes.

Notes

  • This dish can be served with crusty bread for a complete meal.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
