Instructions
- Cake
- Preheat and Prepare Pans: Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
- Combine Dry Ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
- Cream Butter and Sugar: In a large bowl, beat the butter and sugar until light and fluffy.
- Add Eggs and Vanilla: Beat in the eggs one at a time, then add vanilla extract.
- Mix Together: Alternate adding the dry ingredients and coconut milk to the butter mixture, starting and ending with the dry ingredients.
- Bake: Divide batter evenly among the prepared cake pans. Bake for 25–30 minutes or until a toothpick comes out clean. Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
- Frosting
- Make Frosting: In a large bowl, beat butter until creamy. Gradually add powdered sugar, then coconut milk, and vanilla extract.
- Assemble Cake: Place one cake layer on a serving plate and spread with frosting. Sprinkle with shredded coconut. Repeat with the remaining layers. Frost the top and sides of the cake, then cover with remaining shredded coconut.
- Garnish
- Decorate: Add fresh coconut slices on top for decoration.

- Sifting the powdered sugar for the frosting can prevent lumps.
