  • Fresh coconut slices for garnish

Instructions

  1. Cake
    1. Preheat and Prepare Pans: Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
    2. Combine Dry Ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
    3. Cream Butter and Sugar: In a large bowl, beat the butter and sugar until light and fluffy.
    4. Add Eggs and Vanilla: Beat in the eggs one at a time, then add vanilla extract.
    5. Mix Together: Alternate adding the dry ingredients and coconut milk to the butter mixture, starting and ending with the dry ingredients.
    6. Bake: Divide batter evenly among the prepared cake pans. Bake for 25–30 minutes or until a toothpick comes out clean. Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
  2. Frosting
    1. Make Frosting: In a large bowl, beat butter until creamy. Gradually add powdered sugar, then coconut milk, and vanilla extract.
    2. Assemble Cake: Place one cake layer on a serving plate and spread with frosting. Sprinkle with shredded coconut. Repeat with the remaining layers. Frost the top and sides of the cake, then cover with remaining shredded coconut.
  3. Garnish
    1. Decorate: Add fresh coconut slices on top for decoration.
