Description

A delicious grilled chicken plate served with ranch dressing, mixed greens, and cherry tomatoes.

Ingredients

Scale
  • 4 pieces boneless and skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 cup ranch dressing
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste salt
  • to taste black pepper
  • 1 tablespoon lemon juice
  • for serving mixed greens
  • 1 cup cherry tomatoes, halved

Instructions

  1. Prepare the Marinade: In a bowl, mix olive oil, garlic powder, paprika, lemon juice, salt, and black pepper. Coat the chicken breasts with the marinade, ensuring even coverage.

  2. Marinate the Chicken: Place the marinated chicken in a sealed container or zip-lock bag. Refrigerate for at least 30 minutes, or overnight for best results.

  3. Preheat the Grill: Preheat your grill to medium-high heat.

  4. Grill the Chicken: Place the marinated chicken breasts on the preheated grill. Cook for about 6–7 minutes on each side, or until fully cooked and charred on the outside. Check doneness by ensuring the internal temperature reaches 165°F (74°C).

  5. Prepare the Plate: Arrange mixed greens and cherry tomatoes on serving plates.

  6. Add Ranch Dressing: Once the chicken is grilled, place it on the prepared plate. Drizzle the ranch dressing over the chicken and vegetables. Sprinkle chopped parsley on top for garnish.

Notes

  • For extra flavor, consider adding onion powder or cayenne pepper to the marinade.
  • You can substitute chicken thighs for chicken breasts if preferred; adjust cooking time accordingly.
  • For a smoky flavor, add a few wood chips to the grill during cooking.
  • Serve with a side of crusty bread or mashed potatoes for a complete meal.
