Description

A delicious creamy pasta dish with shrimp and tortellini, flavored with roasted garlic and Parmesan cheese.


Ingredients

  • 9 oz fresh or frozen tortellini
  • 1 lb raw deveined shrimp
  • 1 whole garlic bulb (for roasting)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley
  • 2 tbsp olive oil (for roasting garlic)
  • 2 tbsp butter (for sautéing shrimp)

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until golden.
  2. Cook tortellini in boiling salted water according to package instructions until al dente. Drain and set aside.
  3. In a skillet over medium heat, melt butter. Add shrimp seasoned with salt and pepper; cook until pink and opaque (about 3-4 minutes per side).
  4. Lower heat and add heavy cream and roasted garlic (squeezed from the bulb). Simmer for 2-3 minutes until slightly thickened.
  5. Stir in Parmesan cheese until melted and combined.
  6. Toss cooked tortellini with the creamy sauce in the skillet until well-coated.

Notes

  • Feel free to add more vegetables such as spinach or sun-dried tomatoes for additional flavor.
