Description

A delicious and easy air fryer chicken curry recipe.


Ingredients

  • 34 boneless, skinless chicken breasts (about 1 lbs)
  • 4 cloves fresh garlic, minced
  • 1 medium onion, sliced thinly
  • 2 tbsp curry powder
  • 1 cup full-fat coconut milk
  • 1 tbsp vegetable oil
  • Salt & pepper to taste
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Chop chicken into bite-sized pieces.
  2. Preheat air fryer to 360°F (182°C).
  3. In a bowl, combine chicken, oil, garlic, and onion; toss well.
  4. Add curry powder, salt, and pepper; mix thoroughly to coat chicken.
  5. Stir in coconut milk until well combined.
  6. Transfer mixture to air fryer basket and cook for 12-15 minutes or until chicken is fully cooked.
  7. Garnish with cilantro and serve hot over rice or with naan.

Notes

  • Adjust seasoning to your taste.
  • For a spicier dish, add some chili powder or chopped chili peppers.
