- 1 cup all-purpose flour
- 2 large eggs
- 1 cup whole milk (or almond milk)
- 8 oz cream cheese (softened)
- 2 tbsp sugar
- 1 tsp vanilla extract
- Fresh fruit for topping (optional)
Instructions
- In a mixing bowl, whisk together flour, eggs, milk, and a pinch of salt until smooth.
- Preheat a nonstick skillet over medium heat and lightly grease with butter or oil.
- Pour about 1/4 cup of batter into the skillet, swirling to cover evenly. Cook for about 2 minutes per side until set.
- In another bowl, mix softened cream cheese, sugar, and vanilla until creamy.
- Spoon about 2 tablespoons of filling onto each crepe’s center and fold the sides over.
- Place filled blintzes seam-side down in the skillet and cook for 3-4 minutes per side until golden brown.
- Serve warm with fresh fruit or maple syrup.
Notes
- For a dairy-free option, use almond milk and vegan cream cheese.
- These can be made ahead and reheated before serving.
