Description

Delicious cream cheese blintzes filled with a creamy mixture and topped with fresh fruit.


Ingredients

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup whole milk (or almond milk)
  • 8 oz cream cheese (softened)
  • 2 tbsp sugar
  • 1 tsp vanilla extract
  • Fresh fruit for topping (optional)

Instructions

  1. In a mixing bowl, whisk together flour, eggs, milk, and a pinch of salt until smooth.
  2. Preheat a nonstick skillet over medium heat and lightly grease with butter or oil.
  3. Pour about 1/4 cup of batter into the skillet, swirling to cover evenly. Cook for about 2 minutes per side until set.
  4. In another bowl, mix softened cream cheese, sugar, and vanilla until creamy.
  5. Spoon about 2 tablespoons of filling onto each crepe’s center and fold the sides over.
  6. Place filled blintzes seam-side down in the skillet and cook for 3-4 minutes per side until golden brown.
  7. Serve warm with fresh fruit or maple syrup.
