A delicious and creamy Chicken Scampi recipe, perfect for a weeknight dinner.

- 1 pound boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 4 tbsp unsalted butter
- 1 cup low-sodium chicken broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 tbsp lemon juice
- 2 tbsp fresh parsley, chopped (for garnish)
- Salt & pepper to taste
Instructions
- Begin by slicing the chicken breasts into bite-sized pieces and mincing the garlic.
- In a large skillet over medium heat, melt the butter until bubbly. Add the chicken pieces seasoned with salt and pepper and cook until golden brown on each side.
- Once cooked through, add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Pour in the chicken broth and heavy cream, stirring well to combine. Let it simmer until slightly thickened.
- Stir in freshly grated Parmesan cheese until melted smoothly into the sauce. Add lemon juice to taste.
- Serve Chicken Scampi over fluffy Garlic Parmesan Rice and garnish with chopped parsley.
Notes
- This dish is best served fresh but can be stored in the refrigerator for up to 3 days.
- For a lighter version, you can use half-and-half instead of heavy cream.
