Description

A delicious and creamy Chicken Scampi recipe, perfect for a weeknight dinner.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Salt & pepper to taste

Instructions

  1. Begin by slicing the chicken breasts into bite-sized pieces and mincing the garlic.
  2. In a large skillet over medium heat, melt the butter until bubbly. Add the chicken pieces seasoned with salt and pepper and cook until golden brown on each side.
  3. Once cooked through, add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
  4. Pour in the chicken broth and heavy cream, stirring well to combine. Let it simmer until slightly thickened.
  5. Stir in freshly grated Parmesan cheese until melted smoothly into the sauce. Add lemon juice to taste.
  6. Serve Chicken Scampi over fluffy Garlic Parmesan Rice and garnish with chopped parsley.

  • This dish is best served fresh but can be stored in the refrigerator for up to 3 days.
  • For a lighter version, you can use half-and-half instead of heavy cream.
