  • 8 oz egg noodles or fluffy rice (for serving)
  • 2 tbsp all-purpose flour
  • 2 tsp Dijon mustard
  • 2 tbsp olive oil or butter (for sautéing)
  • Salt and pepper to taste

Instructions

  1. Gather all ingredients and chop the onion and garlic. Slice mushrooms uniformly.
  2. Heat olive oil in a large skillet over medium-high heat. Add diced chicken seasoned with salt and pepper. Cook until golden brown on all sides (about 5-7 minutes).
  3. Add onion and garlic; sauté for another 3-4 minutes until fragrant.
  4. Stir in mushrooms and cook until tender (about another 5 minutes).
  5. Sprinkle flour over the mixture, stirring to combine. Gradually pour in chicken broth and add Dijon mustard; stir until smooth.
  6. Reduce heat to low, mix in sour cream until fully incorporated, and simmer gently for about 5 minutes.
  7. Serve hot over egg noodles or rice, garnished with fresh parsley if desired.
