- 4 boneless, skinless chicken breasts (approximately 1 lb)
- 3 cloves fresh garlic, minced
- 8 oz sliced mushrooms (cremini or button)
- 1 medium yellow onion, finely chopped
- 1 cup chicken broth
- 1 cup sour cream
- 8 oz egg noodles or fluffy rice (for serving)
- 2 tbsp all-purpose flour
- 2 tsp Dijon mustard
- 2 tbsp olive oil or butter (for sautéing)
- Salt and pepper to taste
Instructions
- Gather all ingredients and chop the onion and garlic. Slice mushrooms uniformly.
- Heat olive oil in a large skillet over medium-high heat. Add diced chicken seasoned with salt and pepper. Cook until golden brown on all sides (about 5-7 minutes).
- Add onion and garlic; sauté for another 3-4 minutes until fragrant.
- Stir in mushrooms and cook until tender (about another 5 minutes).
- Sprinkle flour over the mixture, stirring to combine. Gradually pour in chicken broth and add Dijon mustard; stir until smooth.
- Reduce heat to low, mix in sour cream until fully incorporated, and simmer gently for about 5 minutes.
- Serve hot over egg noodles or rice, garnished with fresh parsley if desired.

- For added flavor, you can include fresh herbs like parsley or thyme.
