Description
A delicious and healthy Greek yogurt chicken pasta salad that is perfect for a quick meal.
Ingredients

- 3–4 pieces boneless, skinless chicken breasts
- 1 cup full-fat Greek yogurt
- 8 oz penne or fusilli pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ red onion, thinly sliced
- 2 tsp dried oregano
- Juice of 1 lemon (about 2 tbsp)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Marinate the chicken: In a bowl, combine Greek yogurt, lemon juice, oregano, salt, and pepper.
- Coat the chicken breasts in the marinade and let it sit for at least 30 minutes.
- Cook the pasta according to package instructions and set aside.
- Grill or bake the chicken breasts until cooked through, then slice them.
- In a large bowl, combine pasta, chicken, cherry tomatoes, cucumber, and red onion.
- Drizzle with olive oil, season with additional salt and pepper, and toss to combine.
- Serve immediately or refrigerate to serve chilled.
