Ingredients

  • 1 cup full-fat Greek yogurt
  • 8 oz penne or fusilli pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ red onion, thinly sliced
  • 2 tsp dried oregano
  • Juice of 1 lemon (about 2 tbsp)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken: In a bowl, combine Greek yogurt, lemon juice, oregano, salt, and pepper.
  2. Coat the chicken breasts in the marinade and let it sit for at least 30 minutes.
  3. Cook the pasta according to package instructions and set aside.
  4. Grill or bake the chicken breasts until cooked through, then slice them.
  5. In a large bowl, combine pasta, chicken, cherry tomatoes, cucumber, and red onion.
  6. Drizzle with olive oil, season with additional salt and pepper, and toss to combine.
