A simple and delicious recipe for cherry preserves using fresh cherries and almond extract.

- 1 lb fresh cherries (pitted)
- 1 cup granulated sugar
- 1 cup water
- 1 tsp almond extract
- Red food coloring (optional)
Instructions
- Wash and pit the fresh cherries.
- In a medium saucepan, combine sugar and water over medium heat until dissolved.
- Remove from heat; stir in almond extract and food coloring if using.
- Place cherries in sterilized jars; pour syrup over them until fully submerged.
- Seal jars tightly; let cool before refrigerating for at least five days.

- Allowing the cherries to sit in the syrup enhances their flavor.
