- 2 tbsp olive oil
- 1 cup bell peppers (diced)
- 1 medium onion (chopped)
- 3 cloves fresh garlic (minced)
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 2 tsp Cajun seasoning
- 1/2 cup Parmesan cheese (freshly grated)
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions
- Cook the tortellini according to package instructions; drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chopped onion and bell peppers; sauté until softened.
- Stir in minced garlic and cook until fragrant, about 30 seconds.
- Pour in heavy cream and chicken broth; simmer for 3-5 minutes until slightly thickened.
- Add Cajun seasoning, salt, and pepper to taste.
- Toss in the cooked tortellini until well coated. Cook for an additional 2-3 minutes to heat through.
- Remove from heat; stir in Parmesan cheese until melted. Garnish with fresh parsley before serving.
Notes
- This dish can be made with frozen tortellini for a quicker option.
- Feel free to adjust the spiciness by adding more or less Cajun seasoning.
