  • 1 cup bell peppers (diced)
  • 1 medium onion (chopped)
  • 3 cloves fresh garlic (minced)
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tsp Cajun seasoning
  • 1/2 cup Parmesan cheese (freshly grated)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Cook the tortellini according to package instructions; drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and bell peppers; sauté until softened.
  3. Stir in minced garlic and cook until fragrant, about 30 seconds.
  4. Pour in heavy cream and chicken broth; simmer for 3-5 minutes until slightly thickened.
  5. Add Cajun seasoning, salt, and pepper to taste.
  6. Toss in the cooked tortellini until well coated. Cook for an additional 2-3 minutes to heat through.
  7. Remove from heat; stir in Parmesan cheese until melted. Garnish with fresh parsley before serving.
