- 2 cups frozen tater tots
- 6 large eggs
- ¼ cup whole milk
- ½ cup diced bell peppers
- 1 cup fresh spinach, chopped
- 1 cup shredded sharp cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a muffin tin.
- In a bowl, slightly mash the frozen tater tots and press them into each muffin cup to form a crust. Bake for 15 minutes until golden brown.
- In another bowl, whisk together eggs, milk, salt, and pepper. Stir in bell peppers and spinach.
- Pour the egg mixture into the baked tater tot cups until nearly full. Top with cheese.
- Return to the oven and bake for an additional 15-20 minutes until the egg is set and cheese is melted.
