A delicious and hearty lasagna soup made with ground beef, creamy ricotta, and melted mozzarella.
Ingredients

- 1 lb ground beef
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 30 oz canned diced tomatoes (2 cans)
- 4 cups beef broth
- 8 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
Instructions
- In a large pot over medium heat, brown the ground beef with chopped onion until cooked through (about 5 minutes). Drain excess fat.
- Add minced garlic and cook for an additional minute until fragrant. Stir in canned diced tomatoes with their juices.
- Pour in beef broth and bring to a simmer.
- Add broken lasagna noodles and cook for about 10 minutes until al dente, stirring occasionally.
- Stir in ricotta cheese until well mixed. Top with shredded mozzarella and let melt before serving.
- Serve hot, garnished with fresh basil if desired.
