Description

A delicious and hearty lasagna soup made with ground beef, creamy ricotta, and melted mozzarella.


Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 30 oz canned diced tomatoes (2 cans)
  • 4 cups beef broth
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese

Instructions

  1. In a large pot over medium heat, brown the ground beef with chopped onion until cooked through (about 5 minutes). Drain excess fat.
  2. Add minced garlic and cook for an additional minute until fragrant. Stir in canned diced tomatoes with their juices.
  3. Pour in beef broth and bring to a simmer.
  4. Add broken lasagna noodles and cook for about 10 minutes until al dente, stirring occasionally.
  5. Stir in ricotta cheese until well mixed. Top with shredded mozzarella and let melt before serving.
  6. Serve hot, garnished with fresh basil if desired.
