- 8 oz spaghetti or linguine
- 1 lb large fresh shrimp, peeled and deveined
- 1 cup asparagus, trimmed and cut into 2-inch pieces
- 3 cloves garlic, minced
- 1/4 cup freshly squeezed lemon juice
- 1 lemon, zest
- 2 tbsp extra virgin olive oil
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Cook the pasta in salted water according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
- In a large skillet over medium heat, heat olive oil. Add minced garlic and sauté until fragrant, about 30 seconds.
- Add shrimp to the skillet; cook until pink and opaque, about 3-4 minutes per side.
- Stir in asparagus; cook for another 3-4 minutes until tender but crisp.
- Pour in lemon juice and zest, mixing well. If needed, add reserved pasta water for creaminess.
- Toss drained pasta into the skillet with the shrimp mixture; combine gently.
- Finish with grated Parmesan cheese, salt, pepper, and red pepper flakes if desired.
Notes
- This dish is best served immediately while the pasta is warm.
- Feel free to add additional vegetables if desired.
