- 8 oz halloumi cheese
- 2 tbsp honey
- 4 cups mixed greens (arugula and spinach)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, chopped
- 2 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- 1 tsp red pepper flakes
Instructions
- Wash and dry mixed greens.
- Halve the cherry tomatoes and chop cucumbers into bite-sized pieces.
- In a skillet over medium heat, add olive oil and fry halloumi slices until golden brown (about 2-3 minutes per side).
- In a bowl, whisk together honey, lemon juice, olive oil, and red pepper flakes to create the dressing.
- In a large bowl, combine mixed greens, tomatoes, cucumbers, and fried halloumi. Drizzle with dressing and toss gently.
- Serve immediately while the halloumi is warm.

- For best flavor, serve salad while the halloumi is still warm.
- Feel free to add other vegetables or nuts for extra texture.
