- 2 cups frozen tater tots
- 1 cup cooked ground beef or turkey
- 1 cup shredded cheddar or mozzarella cheese
- 1/2 cup chopped bell peppers and onions
- 1/4 cup sour cream (for topping)
- Salt & pepper to taste
Instructions
- Preheat oven to 425°F (220°C). Grease a muffin tin with nonstick spray.
- In a large bowl, slightly mash the tater tots. Press the mixture into each muffin cup to form a base.
- In a skillet over medium heat, cook ground meat until browned. Add chopped vegetables; season with salt and pepper.
- Spoon the meat mixture into each tater tot base generously. Top with shredded cheese.
- Bake in preheated oven for 15-20 minutes until golden brown and bubbly.
- Allow to cool slightly before serving warm, topped with sour cream.
