Ingredients

- 8 bone-in lamb chops (about 1 inch thick)
- 1/4 cup extra virgin olive oil
- 3 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Preheat your grill to medium-high heat (400°F/200°C).
- In a bowl, mix olive oil, garlic, rosemary, lemon juice, salt, and pepper.
- Coat each lamb chop evenly with the marinade; let sit at room temperature for 30 minutes.
- Grill the lamb chops for about 4-5 minutes on each side until they reach an internal temperature of 145°F for medium-rare.
- Allow the chops to rest for 5 minutes before serving.
