Description
A delicious creamy pasta dish with Italian sausage and baby spinach.

- 8 oz (225 g) penne pasta
- 12 oz (340 g) Italian sausage, sliced
- 3 cups baby spinach
- 1 cup diced tomatoes (canned or fresh)
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tbsp olive oil
- to taste salt and pepper
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook for 2-3 minutes until softened.
- Stir in minced garlic and cook for 1 minute.
- Add sliced Italian sausage to the pot. Cook until browned, about 5-6 minutes, stirring occasionally.
- Pour in diced tomatoes, chicken broth, and heavy cream. Bring the mixture to a light simmer.
- Add penne pasta to the pot. Stir to combine, cover, and cook for 12-13 minutes, stirring occasionally, until pasta is al dente and liquid is reduced.
- Stir in baby spinach and Parmesan cheese. Cook for an additional 2-3 minutes until spinach has wilted and sauce is creamy.
- Season with salt and pepper to taste. Serve hot.
Notes
- This dish can be served with crusty bread for a complete meal.
- Feel free to add additional vegetables if desired.
