Description

A delicious creamy pasta dish with Italian sausage and baby spinach.


Ingredients

  • 8 oz (225 g) penne pasta
  • 12 oz (340 g) Italian sausage, sliced
  • 3 cups baby spinach
  • 1 cup diced tomatoes (canned or fresh)
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • to taste salt and pepper

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook for 2-3 minutes until softened.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add sliced Italian sausage to the pot. Cook until browned, about 5-6 minutes, stirring occasionally.
  5. Pour in diced tomatoes, chicken broth, and heavy cream. Bring the mixture to a light simmer.
  6. Add penne pasta to the pot. Stir to combine, cover, and cook for 12-13 minutes, stirring occasionally, until pasta is al dente and liquid is reduced.
  7. Stir in baby spinach and Parmesan cheese. Cook for an additional 2-3 minutes until spinach has wilted and sauce is creamy.
  8. Season with salt and pepper to taste. Serve hot.

  • This dish can be served with crusty bread for a complete meal.
