This delicious pineapple bread pudding is a perfect dessert for gatherings!

- 1/2 cup butter (melted)
- 1 cup white sugar
- 6 eggs
- 1/2 tablespoon vanilla extract
- 6 slices white bread (thick cut, cubed)
- 1 can (20 oz) crushed pineapple (drained)
- 1/2 cup brown sugar (packed, for topping)
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a large bowl, whisk together the melted butter and white sugar until well combined.
- Beat in the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Add the cubed bread and drained pineapple, stirring until all the bread is fully saturated.
- Pour the mixture into the prepared baking dish and sprinkle the brown sugar evenly over the top.
- Bake for 50–55 minutes, or until the top is golden and set.
