Description

A delicious chicken salad with grapes, perfect for sandwiches or wraps!


Ingredients

  • 3 cups cooked chicken, shredded (rotisserie works great)
  • 1 cup red seedless grapes, halved
  • 1/2 cup celery, diced
  • 1/4 cup red onion, finely minced
  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup slivered almonds (optional)

Instructions

  1. In a large bowl, combine the shredded chicken, halved grapes, celery, and red onion.
  2. In a separate small bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, salt, and pepper.
  3. Pour the dressing over the chicken mixture and fold gently until everything is evenly coated.
  4. Stir in the slivered almonds if using for extra crunch.
  5. Cover and refrigerate for at least 1 hour before serving.
  6. Serve on bread, croissants, or in lettuce wraps.
