Description
A delicious strawberry cake made with fresh strawberries and topped with a smooth cream cheese frosting.

- 1 pint fresh strawberries
- 15 ounces French vanilla cake mix
- 3 ounces strawberry gelatin mix
- 4 large eggs
- 1 cup vegetable oil
- 1/4 cup water
- 1/2 block (4 ounces) cream cheese, softened to room temperature
- 1/3 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 Tablespoon milk
Instructions
- Preheat oven to 350F degrees. Spray 9×13-inch baking dish with nonstick cooking spray.
- Rinse strawberries with water, then gently dry them with a paper towel. Remove the stems and dice.
- Put strawberries into a large Ziploc bag and crush them up using a rolling pin or other heavy object. Set aside.
- In a large bowl, combine cake mix with gelatin mix. Mix until combined.
- Stir in eggs, vegetable oil and water.
- Add in 1 cup of the smashed strawberries and gently stir by hand.
- Pour batter into prepared baking dish.
- Bake on the middle oven rack for about 30-33 minutes, checking for doneness with a toothpick.
- Allow cake to cool completely before adding frosting.
- Using an electric mixer, mix together cream cheese and butter until smooth, creamy and lump-free.
- Add in powdered sugar, vanilla extract and milk. Mix until smooth and creamy.
- Slather frosting onto cooled cake and refrigerate for about an hour.
- Slice and serve, topping each piece with a slice of fresh strawberry.
Notes
- Oven times can vary, so please go by doneness, not just time.
- If frosting needs to be creamier, add more milk a little bit at a time until desired consistency is reached.
