- 8 oz Cream Cheese (softened)
- 1 cup Powdered Sugar
- 1 cup Freeze-Dried Strawberries (processed into powder)
- 1 tsp Vanilla Extract
- 1/2 cup Heavy Cream
- 1 cup Graham Crackers (crushed)
- 2 tbsp Freeze-Dried Strawberries (crushed, optional)
Instructions
- Prepare Filling: In a medium bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy. Blend in the freeze-dried strawberry powder, vanilla extract, and heavy cream until fully combined. Chill the mixture in the refrigerator for about 30 minutes to firm up.
- Prepare Coating: In a shallow dish or plate, combine the crushed graham crackers with the additional crushed freeze-dried strawberries (if using). Set aside.
- Shape Balls: Scoop out tablespoon-sized portions of the chilled filling. Roll each portion between your palms to form a smooth ball. Immediately roll each ball in the graham cracker mixture until fully coated.
- Serve or Store: Arrange the coated cheesecake bites on a platter. Optionally, drizzle with melted white chocolate. Store any leftovers in an airtight container in the refrigerator.
