A delicious recipe for dog-friendly pancakes made with pumpkin and whole wheat flour.

- 1 cup whole wheat flour
- 1 teaspoon baking powder
- a pinch of cinnamon (optional)
- ½ cup canned pumpkin puree
- 1 egg
- ½ cup milk (whole, low-fat, or non-dairy)
- coconut oil or cooking spray (for greasing the pan)
Instructions
- In a large mixing bowl, combine 1 cup of whole wheat flour, 1 teaspoon of baking powder, and if you choose, a pinch of cinnamon. Whisk them together until well blended.
- In a separate bowl, mix together ½ cup of canned pumpkin puree, 1 egg, and ½ cup of milk. Stir until the mixture is smooth and creamy.
- Pour the wet mixture into the bowl with the dry ingredients. Gently fold them together until just combined. Avoid overmixing; a few lumps are perfectly fine.
- Preheat a non-stick skillet or griddle over medium heat. You can lightly grease it with a bit of coconut oil or cooking spray to prevent sticking.
- Using a ladle or measuring cup, pour batter onto the skillet, making pancakes about 3 inches in diameter. Cook for 3-4 minutes on one side until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
- Once cooked, remove the pancakes from the skillet and let them cool on a wire rack. This prevents them from becoming soggy.
- Cut the pancakes into small, bite-sized pieces suitable for your dog. You can serve them plain or top them with a dollop of plain yogurt for an extra treat!
