  • 1 egg
  • ½ cup milk (whole, low-fat, or non-dairy)
  • coconut oil or cooking spray (for greasing the pan)

Instructions

  1. In a large mixing bowl, combine 1 cup of whole wheat flour, 1 teaspoon of baking powder, and if you choose, a pinch of cinnamon. Whisk them together until well blended.
  2. In a separate bowl, mix together ½ cup of canned pumpkin puree, 1 egg, and ½ cup of milk. Stir until the mixture is smooth and creamy.
  3. Pour the wet mixture into the bowl with the dry ingredients. Gently fold them together until just combined. Avoid overmixing; a few lumps are perfectly fine.
  4. Preheat a non-stick skillet or griddle over medium heat. You can lightly grease it with a bit of coconut oil or cooking spray to prevent sticking.
  5. Using a ladle or measuring cup, pour batter onto the skillet, making pancakes about 3 inches in diameter. Cook for 3-4 minutes on one side until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
  6. Once cooked, remove the pancakes from the skillet and let them cool on a wire rack. This prevents them from becoming soggy.
  7. Cut the pancakes into small, bite-sized pieces suitable for your dog. You can serve them plain or top them with a dollop of plain yogurt for an extra treat!
