- 2 large eggs
- 2/3 cup granulated sugar
- 1/2 cup water
- 1 tablespoon honey
- 1 teaspoon baking powder
- Sweet red bean paste (anko)
- Oil for greasing the pan

- Prepare the Batter: In a mixing bowl, whisk the eggs and sugar until the mixture is light and fluffy. Add honey and water, mixing well until combined. Sift the flour and baking powder into the wet ingredients, stirring gently until smooth. Be careful not to overmix. Let the batter rest for about 30 minutes to thicken.
- Cook the Pancakes: Heat a non-stick pan over medium-low heat and lightly oil it with a paper towel. Pour a small amount of batter (about 2 tablespoons) into the pan to form a round pancake. Cook until bubbles form on the surface, then flip to cook the other side until golden brown. Each side should take about 1-2 minutes. Transfer to a plate and cover with a damp cloth to retain softness.
- Assemble the Dorayaki: Take one pancake and spread a generous spoonful of red bean paste in the center. Top with a second pancake and gently press the edges to seal.

- Ensure the batter rests adequately to achieve a fluffy texture.
- Adjust the heat as needed; if the pancakes brown too quickly, lower the heat.
