Instructions

Sift the flour and baking powder into the wet ingredients, stirring gently until smooth. Be careful not to overmix. Let the batter rest for about 30 minutes to thicken.
  2. Cook the Pancakes: Heat a non-stick pan over medium-low heat and lightly oil it with a paper towel. Pour a small amount of batter (about 2 tablespoons) into the pan to form a round pancake. Cook until bubbles form on the surface, then flip to cook the other side until golden brown. Each side should take about 1-2 minutes.   3. Assemble the Dorayaki: Take one pancake and spread a generous spoonful of red bean paste in the center. Top with a second pancake and gently press the edges to seal.
