Description

A delicious cheesecake topped with a mixed berry sauce, perfect for any occasion.


Ingredients

Scale
  • 1 ½ cups almond flour
  • 3 tbsp melted butter
  • 2 tbsp Lakanto Classic Monk Fruit Sweetener
  • 16 oz cream cheese, softened
  • ½ cup Lakanto Classic Monk Fruit Sweetener
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • ¼ cup sour cream
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tbsp allulose
  • 1 tsp lemon juice

Instructions

  1. Preheat oven to 325°F (160°C). Line an 8-inch pan with parchment.
  2. Mix crust ingredients, press into bottom, bake 8 minutes, cool.
  3. Beat cream cheese and sweetener until smooth. Add eggs, vanilla, and sour cream.
  4. Pour over crust; bake 35–40 minutes until edges set.
  5. Cool completely, then chill 4 hours.
  6. Heat berries with allulose and lemon juice for 5 minutes until syrupy; cool and spoon over cheesecake.

Notes

  • Use full-fat cream cheese for best texture.
  • Add a pinch of salt to the crust for flavor balance.
