A delicious and easy recipe for grilled lemon herb chicken breasts marinated in fresh herbs and lemon juice.
Ingredients

- 4 boneless, skinless chicken breasts
- 1/4 cup fresh lemon juice (from about 2 lemons)
- Zest of 1 lemon
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh thyme, chopped
- 4 garlic cloves, minced
- 3 tbsp olive oil
- Salt and pepper to taste
Instructions
- In a bowl, whisk together lemon juice, zest, parsley, thyme, garlic, olive oil, salt, and pepper.
- Place chicken breasts in a zip-top bag and pour the marinade over them. Seal and refrigerate for at least 30 minutes (up to overnight).
- Preheat grill to medium-high heat.
- Remove chicken from marinade and let excess drip off.
- Grill for 6-7 minutes per side until internal temperature reaches 165°F (75°C).
- Let rest for 5 minutes before slicing and serving.
Notes
- This marinated chicken is great for meal prep and can be served with salads or rice.
- You can also grill vegetables alongside the chicken for a complete meal.
