Description

A delicious and easy recipe for grilled lemon herb chicken breasts marinated in fresh herbs and lemon juice.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh lemon juice (from about 2 lemons)
  • Zest of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh thyme, chopped
  • 4 garlic cloves, minced
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, whisk together lemon juice, zest, parsley, thyme, garlic, olive oil, salt, and pepper.
  2. Place chicken breasts in a zip-top bag and pour the marinade over them. Seal and refrigerate for at least 30 minutes (up to overnight).
  3. Preheat grill to medium-high heat.
  4. Remove chicken from marinade and let excess drip off.
  5. Grill for 6-7 minutes per side until internal temperature reaches 165°F (75°C).
  6. Let rest for 5 minutes before slicing and serving.
